Looking for a healthy and delicious breakfast recipe for this summer? This is the fruit pizza recipe you need. Made with a coconut yogurt base, topped with Ladera Vanilla Quinoa granola, strawberries, kiwis, and chia seeds, it’s a classic healthy breakfast that is not only vegan but also gluten-free!

NATURE’S FRUIT PIZZA?

This is our take on nature’s pizza. What the heck do we mean by nature’s pizza? Well, have you seen that TikTok trend for Nature’s Cereal? This is similar but better. The base is frozen yogurt, which is then topped with fruit, we went with stewed strawberries and kiwi but you can use whatever fruit you prefer, and our Vanilla Quinoa Granola!

COCONUT YOGURT

We opted for coconut yogurt in this recipe for two reasons:

  1. It’s dairy-free which is always the healthier option.
  2. The coconut flavor takes this pizza to a whole other level of deliciousness.

STEWED STRAWBERRIES

If you only have frozen strawberries on hand, like we did, simply add them to a saucepan over low-medium heat and allow them to “stew” or cook down. Make sure to stir them constantly so they don’t stick! If you want some extra sweetness, you can also add a splash of maple syrup as they cook down.

VANILLA QUINOA GRANOLA

Our Vanilla Quinoa Granola makes for the best “crust” or topping not only because it’s SO GOOD, but also because it contains sunflower seeds and pumpkin seeds which will help keep you feeling full and satiated throughout your morning!

INGREDIENTS YOU NEED

The ingredients for this fruit pizza are SO simple, there are only 4. It’s basically a yogurt parfait in pizza form, so it’ll keep you refreshed this summer!

PREPARING THE PIZZA

Something you’ll notice about this recipe is that there are no measurements required and that’s because it’s a foolproof recipe! You definitely can’t mess it up, just follow these simple steps to make your own:

  1. Stew your strawberries, if using frozen.
  2. Line a circular baking pan, or dish of your choice, with parchment paper.
  3. Pour in the coconut yogurt and spread it evenly over the bottom.
  4. Sprinkle the granola on the outer edge to create a “crust.”
  5. Add the strewed strawberries, sliced kiwis, and a little more stewed berries in the center.
  6. Place in the freezer for 3+ hours or overnight.
  7. Slice and enjoy!
